1 package (400 g) Bonatelli vegan pasta

Add 1 tablespoon of olive oil to a large pot and briefly sauté the celery stalk, garlic, and carrot.
Quarter the tomatoes and add them to the pot.
Continue cooking after the tomatoes release their juice. Just before the vegetables are fully cooked, add half a bunch of basil.
Let the mixture cool slightly, then blend until smooth.
Cook your Bonatelli pasta (be careful—it cooks quickly in about 5 minutes).
Serve the pasta on a plate, top with fresh basil and freshly grated parmesan.
