Aubergine Pizza



  • 1 globe eggplant
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 50g tomato juice
  • 1 garlic clove
  • 100g mozzarella
  • 10 basil leaves
  • Salt
  1. Chop the eggplant in the shape of finger-thick circles.
  2. Heat the oven up to 180 degrees.
  3. Place a baking paper on a baking tray and place the eggplant circles on the baking tray.
  4. Put the olive oil and salt in a bowl, mix them and spread the mixture on the eggplant circles.
  5. Cook the eggplant circles in the oven for about 30 minutes until the circles are soft.
  6. Mix the tomato paste, tomato juice and garlic in a bowl. Spread this mixture on the eggplant circles once they are out of the oven.
  7. Slice the mozzarella and place the slices on the eggplant circles.
  8. Cook the eggplant circles with mozzarella slices atop for about 5 minutes until the cheese melts.
  9. Then put the basil leaves on the eggplant circles before serving.
