Broad Beans with Olive Oil and Almonds



  • 500g fresh broad beans
  • 3 medium size onions (First cut in halves, then chopped into thin circles)
  • 6 scallions, finely chopped
  • 2 garlic cloves, crushed
  • Juice of 1/2 lemon
  • 100g raw almonds without shells
  • 1 bunch of dill, finely chopped
  • 300ml water
  • 1 tablespoon honey
  • 6 tablespoons olive oil
  • Wash the beans and soak in lemon water for a little while.
  • Fry the onions in a saucepan with 5 tablespoons of olive oil for 1-2 minutes.
  • Add the beans and scallions.
  • Mix the water, lemon juice, garlic and salt, pour the mixture all over the beans evenly and leave to cook.
  • Take some of the almonds and fry them with 1 tablespoon of olive oil, add the rest of the almonds to the saucepan and cook with the beans.
  • Add the dill.
  • Leave the saucepan to cool, add honey while it is still warm and mix, sprinkle the roasted almonds and prepare for serving.
