Cauliflower Kısır



  • 1 medium size cauliflower
  • 1 small size onion
  • 4 tablespoons olive oil
  • 1 tablespoon tomato paste
  • ½ bunch of fresh mint
  • ½ bunch of parsley
  • ½ bunch of scallions
  • 1 teaspoon of cumin
  • 1 teaspoon of red pepper
  • 2 teaspoons of salt
  • Juice of 1 lemon
  • Fresh Mint and pomegranate (to decorate)


  1. Take away the leaves of cauliflower and wash.
  2. Chop the cauliflower into small pieces and put the pieces into a food processor and process until they get the size of bulgur.
  3. Saute the chopped onion, olive oil and tomato paste.
  4. Then add the cauliflower and keep on sauteing.
  5. Let the cauliflower cool for 15 minutes.
  6. Add chopped greens, spices, salt, lemon juice and mix.
  7. You can decorate with fresh mint and pomegranate
