Cauliflower Pancake



  • 150g cauliflower (processed in a food processor)
  • 30g low-fat kashar cheese (grated)
  • 2 eggs
  • 2 tablespoons whole wheat flour
  • 1 teaspoon mild cream cheese
  • Salt
  • Black pepper

To decorate

  • Greens and flax seeds
  1. Put all ingredients except one egg and mild cream cheese into a bowl and mix well until you have a thick mixture.
  2. Take half of this mixture, roll into a pancake shape and put it in a non-stick pan. Cook both sides until golden brown.
  3. Break an egg into another non-stick pan, and make a sunny side up egg and place it on the pancake.
  4. You can decorate with greens and flax seeds, then serve with mild cream cheese.
