Cilbir (Turkish Poached Eggs)



  • 2 eggs
  • 1 tablespoon vinegar
  • 1 teaspoon salt

For topping

  • 2 tablespoons yogurt, with garlic if needed
  • (Optional) Crushed red pepper, thyme, dried mint
  1. Put some water in a pot and boil.
  2. Add vinegar and salt to the boiling water, create a vortex in the water with a spoon.
  3. Crack the eggs in a bowl. Gently pour the eggs into the vortex one by one.
  4. After 3 minutes, take the eggs out with a colander and put them in a plate.
  5. For the topping, whisk the yogurt in a bowl and pour it over the eggs.
  6. You can add crushed red pepper, thyme and dried mint to decorate.
