Courgette, Yogurt and Walnut Mezze



4 courgettes (800g) ⁠
1 cucumber (grated)⁠
150g strained yogurt⁠
1/2 bunch of dill (finely chopped)⁠
4 tablespoons olive oil⁠
8 walnuts (coarsely ground)⁠
2 garlic cloves (crushed)⁠
Red pepper flakes⁠
Fresh mint (to garnish)

  1. Wash the courgettes and grate them without peeling.
  2. Squeeze the grated courgettes with both hands to extract as much moisture as possible. ⁠
  3. Heat a frying pan over moderate heat, add olive oil and start frying the courgettes.⁠
  4. Fry gently for 15 minutes until the courgettes are cooked.⁠
  5. Take the courgettes to a plate and leave to cool. ⁠
  6. Put yogurt, grated cucumber, crushed garlic cloves and dill in a large bowl and mix them, add the courgettes when they are cooled down and add coarsely ground walnuts. Then mix them all. ⁠
  7. Add salt and red pepper as per taste.⁠
  8. Garnish with fresh mint before you serve.
