Fermented Strawberry Jam

  • 300g strawberry
  • ¾ glass of honey
  • ½ teaspoon sea salt
  • ⅓ glass of whey
  • 1 tablespoon chia seeds

For whey

  • 1lt of fresh pasteurized milk
  • Juice of half a lemon
  1. Wash the strawberries and remove their stalks.
  2. Boil the strawberries, honey and salt over low heat for 5 minutes and allow to cool.
  3. Meanwhile, cook the milk in a saucepan over low heat.
  4. Turn the heat off just before boiling and pour the lemon juice into the saucepan.
  5. Wait for a while, the milk curdles and becomes lumpy.
  6. Strain the milk. The solid piece that stays atop is curd cheese, the liquid that is strained is whey. You can use both products in your meals. (You see the curd cheese spread on bread in the photo, the curd cheese and bread are not taken into account when calculating nutritional values)
  7. When it cools down, add whey and chia seeds to the mixture of strawberries, honey and salt boiled at step 2, and transfer the content to a jar and close its lid very tightly.
  8. Allow to stay at room temperature for 24 hours.
  9. Take it to the fridge, you need to consume it within 1 month.
