Fresh Broad Beans with Molasses and Olive Oil

Recipe
500 g. fresh broad beans
1 onion, (chopped into small pieces)
4 tablespoons olive oil
2 tablespoons molasses
1 tablespoon whole wheat flour made of einkorn wheat
1 bunch of dill, finely chopped
600 ml water
Juice of 2 lemons
Black pepper
4 garlic cloves, crushed
500 g strained yogurt
Peel the beans, and soak them in lemon water (water with the juice of one lemon) to avoid tarnishing.
Saute the onion in a saucepan by gradually adding water.
Add the broad beans to the saucepan and sauté for 5 minutes.
Add 400 ml of water and allow to boil.
Stir the flour in 200 ml of water, pour the mixture into the saucepan and stir a little to incorporate
Add the desired amount of salt and pepper, cover the saucepan and cook for 25-30 minutes on low heat.
Prepare the sauce with the juice of one lemon, molasses and olive oil.
When the cooking is done, take the saucepan from the heater and put half of the dill into the saucepan and stir.
Take the content of the saucepan into a glass container and allow to cool.
After cooling, pour the sauce you have prepared (in step 7) and stir to incorporate.
