Hash Browns with Smoked Aubergine

1kg aubergine (5 pieces)
1 egg
4 tablespoons whole wheat flour
120g feta cheese (smashed)
1/2 bunch of dill (finely chopped)
1 tablespoon olive oil
10g baking powder
Salt
Black pepper
Score the aubergines with a knife, then grill in the oven at 200 degrees.
Scoop out the flesh of aubergines with a spoon, tip into a bowl, mash with a knife, then allow to cool
Add the egg, whole wheat flour, smashed feta cheese, finely chopped dill, olive oil, baking powder, salt and pepper into the bowl, then mix them.
Place a baking paper into a baking tray and spread the mixture on the paper with a spoon. Bake in an oven preheated to 200 degrees until golden brown.
You can serve with yogurt garnished with garlic, fresh mint and flaked red pepper.
