Hash Browns with Smoked Aubergine



  • 1kg aubergine (5 pieces)
  • 1 egg
  • 4 tablespoons whole wheat flour
  • 120g feta cheese (smashed)
  • 1/2 bunch of dill (finely chopped)
  • 1 tablespoon olive oil
  • 10g baking powder
  • Salt
  • Black pepper
  1. Score the aubergines with a knife, then grill in the oven at 200 degrees.
  2. Scoop out the flesh of aubergines with a spoon, tip into a bowl, mash with a knife, then allow to cool
  3. Add the egg, whole wheat flour, smashed feta cheese, finely chopped dill, olive oil, baking powder, salt and pepper into the bowl, then mix them.
  4. Place a baking paper into a baking tray and spread the mixture on the paper with a spoon. Bake in an oven preheated to 200 degrees until golden brown.
  5. You can serve with yogurt garnished with garlic, fresh mint and flaked red pepper.
