Lahmacun Made with Chickpea Flour




For base


  • 1 egg
  • 1 tablespoon yogurt
  • 70 g chickpea flour
  • 1 teaspoon of salt



For topping

  • 120g minced beef
  • ½ mid-sized onion (grated)
  • 1 mid-sized tomato (grated)
  • 4 walnuts (coarsely chopped)
  • ¼ bunch of parsley
  • Black pepper
  • Salt
  • Chilli pepper or isot (red pepper from Southeastern Anatolia) is optional


For base

  1. Add egg and yogurt into a deep bowl and whisk.
  2. Add chickpea flour and salt.
  3. Knead the mixture until you get the dough consistency.
  4. Put the dough between two pieces of baking paper and start rolling the dough with a rolling pin in a front and back motion until you get a thin layer.
  5. Use the brim of a glass or a bowl to get eight equal pieces of thin-layered dough.


For topping

  1. Add minced meat, grated onion, grated tomato, parsley and spices in a deep bowl.
  2. Mix the ingredients and add chopped walnuts.
  3. Put a baking paper on a baking tray and place eight equal pieces of dough on the baking paper.
  4. Put the topping evenly on each piece of dough.
  5. Bake them in the oven preheated to 200 degrees until they turn golden brown.
