Meatball Stew with Lemon and Egg Sauce



  • 250g medium-fat minced beef
  • 1 medium size onion, grated
  • 2 tablespoons fine bulgur (30g)
  • ½ bunch of parsley, finely chopped
  • Salt, black pepper
  • 1 lt water

Lemon and Egg Sauce

  • 1 egg yolk
  • 1 tablespoon strained yogurt (25g)

Juice of ½ lemon

  1. Put minced meat in a container.
  2. Add grated onion, bulgur, parsley, salt and black pepper to minced meat and knead thoroughly.
  3. Roll off small pieces of minced beef.
  4. Put the water in a pot and add the meatballs, start cooking on medium heat.

Lemon and Egg Sauce

  1. Mix the egg yolk, strained yogurt and lemon juice in a bowl.
  2. Take a ladle of water from the pot and add it to the sauce, mix well.
  3. Slowly add the sauce to the cooked meatballs.
  4. After adding the sauce, cook for 10 minutes.
  5. Decorate with parsley for serving.
