Pasta al Pomodoro by Audrey Hepburn

Ingredients

Recipe

  • 1kg of tomatoes
  • 1 celery stalk
  • 1 onion (peeled)
  • 100g carrots (peeled)
  • 1 bunch of basil
  • 1 tablespoon olive oil
  • 2 garlic cloves
  • 20g parmesan cheese
  • 400g vegan pasta
  • Salt
  • Black pepper
  1. Put 1 tablespoon of olive oil in a deep pot and sauté the celery stalk, garlic, carrot for a while.
  2. Chop the tomatoes into four pieces and put them into the pot.
  3. The tomatoes will start watering, no worries and keep on doing what you are doing, put half a bunch of basil as the vegetables are about to cook.
  4. Leave to cool, after a while put the ingredients of the pot into a blender and blend.
  5. Cook the pasta (It is cooked in just 5 minutes, so please do not overcook)
  6. Once the pasta is cooked, put it into a plate and garnish with finely chopped fresh basil.
  7. Then grate fresh parmesan and it is ready to be served.
