Skewed Sole Fish



  • 170g sole fish fillet (from 400g of fish), its skin should be removed
  • 4 mushrooms, chopped into four pieces
  • 2 cherry tomatoes, chopped into two
  • 8 slices of lemon
  • 1 handful of fresh basil
  • 1 teaspoon olive oil

To marinate the sole fish

  • 1 teaspoon olive oil
  • 1 garlic clove, crushed
  • 1 teaspoon lemon juice
  • salt
  • black pepper


  • ½ bunch of fresh basil, finely chopped
  • 10 dried tomatoes, soaked in water and softened
  • 5 cherry tomatoes, chopped into tiny pieces
  • 1 teaspoon of olive oil
  • Salt
  1. Marinate the sole fish in a mixture that consists of salt, black pepper, olive oil, crushed garlic, lemon juice, salt and pepper for 20 minutes.
  2. Bring the sole fish fillets into spiral shape and skewer these fish rolls, mushrooms, cherry tomato pieces and lemon slices, evenly divided between four wooden skewers.
  3. Put a teaspoon of olive oil with the help of a brush on the pieces skewered, cook them in an oven preheated to 180 degrees for 15-20 minutes.
  4. Remove the peel of the dried tomatoes and chop them into tiny pieces, add the cherry tomatoes, basil, salt and olive oil, then mix them all. This will be your salad.
  5. Serve the sole fish skewers with the salad.
