Ingredients

4 large dates
50ml milk
1 egg
1 small size ripe banana
4 teaspoons cocoa (10g)
3 tablespoons oat flour (45g)
1 teaspoon baking powder
1 teaspoon salt
Soak the dates in hot water for ten minutes in order to soften them.
Remove the seeds of dates, put them in the food processor with milk and process until you get a mash.
Separate the eggs.
Then add egg yolk, banana, cocoa and oat flour to the mash. Process them all once more until you get a smooth consistency.
Beat the egg whites with baking soda and salt until they are foamy.
Add the foamy egg to the other mixture. Mix gently in the same direction in order to avoid defoaming.
Apply a thin layer of olive oil on two soufflé containers and divide the mixture into containers.
Bake in an oven preheated to 180 degrees for 12 minutes.
