Spinach Hash Browns



  • 700g spinach
  • 1 medium-size carrot (130 g)
  • 300g low-fat kashar cheese (Both kasseri and kashkaval can be used as substitutes for kashar cheese)
  • 2 eggs
  • 1/2 bunch of scallions (finely chopped)
  • 2 garlic cloves (crushed)
  • 1/2 bunch of dill (finely chopped)
  • 5 tablespoons whole wheat flour
  • 5 g baking powder
  • 65ml olive oil
  • 1 teaspoon salt and black pepper
  • 1 teaspoon black cumin
  • Finely chop the spinach leaves and put them in a bowl with finely chopped scallions.
  • Grate the carrots and cheese, then add into the bowl filled with spinach.
  • Break the eggs into the bowl, then add olive oil, finely chopped dill, whole wheat flour and baking powder.
  • You may add a teaspoon of black pepper and salt to give flavor.
  • After adding all the ingredients, mix until you have a homogeneous mixture.
  • Spread the mixture on a baking tray and sprinkle black cumin.
  • Bake in an oven preheated to 175 degrees for 40 minutes.
