Sweet Salad with Pineapple

2 bunches of spinach
3 slices of pineapple
12 walnuts
6 dried figs
250g full-fat curd cheese
3 scallions

1 tablespoon mustard
Juice of one lemon
3 tablespoons olive oil
1 tablespoon of pomegranate molasses
Wash the spinach and cut the roots with a knife
Roast the walnuts with 1 tablespoon olive oil
Chop the curd cheese into cubes
Finely chop the figs
Chop the pineapples into small pieces
Finely chop the scallions
For the dressing: mix mustard, olive oil, lemon juice and pomegranate molasses in a separate bowl.
Mix all ingredients in a large salad bowl
Pour the salad dressing on the salad and mix once again before serving.
