Zoodle with Shrimp



  • 500g courgette
  • 250g jumbo shrimp
  • 3 garlic cloves
  • 4 tablespoons olive oil
  • 150g cherry tomatoes
  • 1 lemon
  • 20g pine nut
  • Salt and pepper
  1. Roast the tomatoes for 6-7 minutes in the oven preheated to 200 C until they pop.
  2. Roast the pine nuts in a pan until dry.
  3. Slice the courgettes into thin strips with a julienne slicer.
  4. Grate the lemon peel and then squeeze the lemon to have its juice.
  5. Marinate the shrimps with 2 tablespoons of olive oil, salt, pepper, lemon peel and juice of half a lemon.
  6. Sauté the courgettes with 2 tablespoons of olive oil in a large saucepan for one or two minutes
  7. Sauté the shrimps with garlic in another pan
  8. Put all the ingredients in the pan with courgettes and sauté them for one more minute
  9. Add the juice of half a lemon and decorate with pine nuts before serving.
