Zucchini Ribbons with Quinoa

Ingredients

  • 1kg dark green courgettes
  • 2 medium size onions (chopped into small pieces)
  • 80g quinoa
  • 1 bunch of dill (finely chopped)
  • 200g full-fat curd cheese
  • 6 tablespoons olive oil
  • Juice of one lemon
  • 100ml water
  • Red pepper
  • Salt
  1. Cut the courgettes into long and wide strips with a peeler.
  2. Put olive oil in a saucepan and add onions and lightly roast.
  3. Put the courgette strips. Add water, lemon juice, salt and mix them but do not dismember the courgettes, and leave to cook.
  4. Add the boiled quinoa and the dill just before the end of cooking and take it away from the cooker after five minutes.
  5. Serve with crushed curd cheese and red pepper.
