1 kg anchovies

Clean the anchovies or buy them already cleaned.
Remove the central bone and open them like a butterfly.
Finely chop the parsley, onion, and spring onions. Mix with 2 tablespoons of olive oil.
Spoon a small amount of this mixture onto the inner side of an opened anchovy, then place another anchovy on top, pressing lightly so they stick together. The filling should stay inside the "sandwich."
Beat the eggs in one bowl and place the cornmeal in another.
Dip the paired anchovies first in the egg, then coat with cornmeal.
Bake in a preheated oven at 180°C (355°F) for about 15 minutes.
Serve hot.
