3 cups finely chopped cauliflower

6 eggs (separated)

6 tablespoons olive oil

1 cup raw buckwheat flour (or oat flour)

1 tablespoon baking powder

1 teaspoon salt

6 whole walnuts, finely chopped

Process the cauliflower in a food processor.
Separate the eggs into two bowls.
Beat the egg whites until they form stiff peaks.
In the other bowl, add buckwheat flour, olive oil, baking powder, and salt to the egg yolks, and mix until smooth.
Gradually fold the egg white foam into the yolk mixture, mixing gently.
Add the chopped walnuts, reserving some for garnish if desired.
Pour the mixture into a baking dish lined with parchment paper.
Bake in a preheated oven at 180°C (355°F) for about 30 minutes.
Check to ensure the inside is cooked through. Remove from the oven when the top is lightly golden.
Let it rest for 10 minutes before slicing thinly.
