Cauliflower Pancakes

  • 1 cup (150 g) cauliflower, processed in a food processor

  • 30 g light cheddar cheese, grated

  • 2 eggs

  • 2 tablespoons whole wheat flour

  • Salt, black pepper

  • 1 teaspoon labneh cheese

  • Fresh herbs and flaxseed

Combine all the ingredients along with one egg and mix well. You should get a thick mixture.
Divide the mixture in half, shape it into rounds with your hands, and place them in a dry pan, flattening them into pancake shapes. Cook until golden on both sides.
In another dry pan, crack the second egg and cook it sunny-side up, then place it on top of the pancakes.
Garnish with fresh herbs and flaxseed, and serve with a dollop of labneh cheese.
