First, add a small amount of salt to the yogurt and whisk it until smooth. Spread the yogurt over the base of a serving plate.

In a deep and slightly wide pot, pour in 1 liter of water and place it on the stove.

Add 1 teaspoon of salt to the water and bring it to a boil.

Once boiling, reduce the heat slightly.

Crack the first egg directly into the hot water from a low height.

Without stirring, poach the egg for about 3 minutes.

Use a slotted spoon to carefully remove the egg and place it over the yogurt on the serving plate.

Repeat the process for the remaining eggs.

Finally, heat 3 tablespoons of olive oil in a small pan until hot, and drizzle it over the eggs before serving.
