Mash the white cheese and ricotta thoroughly with a fork.
Add the crushed garlic, walnuts, and olive oil, and mix well.
Stir in the chopped parsley and dill.
Lightly heat the red pepper flakes in olive oil and drizzle over the spread before serving.
