Fermented Strawberry Jam

  • 300 g strawberries

  • ¾ cup honey

  • ½ teaspoon sea salt

  • ⅓ cup whey

  • 1 tablespoon chia seeds

For the Whey

  • 1 liter fresh pasteurized milk

  • Juice of ½ lemon

Wash and thoroughly clean the strawberries.
Simmer the strawberries, honey, and salt over low heat for 5 minutes, then let cool.
Meanwhile, heat the milk over low heat in a separate pot.
Just before it comes to a boil, turn off the heat and add the lemon juice.
Let it sit for a while— the milk will curdle and separate into curds and whey.
Strain the mixture. The solid part on top is curd cheese (ricotta-style), and the liquid at the bottom is whey. You can use both in recipes (in the photo, curd cheese is shown spread on bread—note that nutritional values do not include the cheese or bread).
Once cooled, add the whey and chia seeds to the strawberry mixture, transfer to a jar, and seal tightly.
