Separate the egg yolk and white.

In a mixing bowl, whisk together the egg yolk, flour, and milk.

In another bowl, beat the egg white and baking powder with a hand mixer until stiff peaks form.

Gently fold the egg white mixture into the batter, being careful not to deflate the foam.

Lightly oil and heat your pancake pan.

Pour a small ladle of the pancake batter into the heated pan and spread slightly without thinning too much.

When small air bubbles start to form on the surface, flip the pancake with a spatula and cook the other side.

Once both sides are cooked, transfer the pancakes to a serving plate.
