Gazpacho

5 tomatoes
1 small cucumber
1 small onion
1 clove of garlic
Juice of half a lemon
4 tablespoons Livvy Olive Oil
(optional: salt, black pepper)

Tarifler

Peel the tomatoes and chop them into large pieces.
Peel and chop the cucumber. Roughly chop the onion and garlic.
Place all the ingredients in a blender or food processor.
Add the lemon juice and olive oil. You can also add a little salt and pepper if you like.
Blend until smooth.
Let the mixture chill in the refrigerator for at least 1–2 hours.
Serve cold, garnished with chopped cucumber or tomatoes if desired.
