  • 200g mushrooms (half a pack)

  • 1 large onion

  • 4 eggs

  • 150g low-fat curd cheese

  • 5–6 sprigs of parsley

  • 2 tablespoons Livvy olive oil

  • Salt

  • Black pepper

  • Red pepper flakes

  1. Sauté the cleaned and sliced mushrooms with the onion in 2 tablespoons of olive oil.

  2. Chop the washed parsley.

  3. Beat the 4 eggs with a mixer.

  4. Add the sautéed mushrooms, curd cheese, spices, parsley, and salt to the eggs and mix again.

  5. Transfer the mixture to a baking dish or cast-iron skillet lined with parchment paper.

  6. Bake in a preheated oven at 180°C (356°F) for 40–45 minutes.

  7. Once baked, cut into 8 slices—1 slice equals 1 serving.
