For the Meatballs
500 g ground beef
1 onion
2 tablespoons quinoa
2 tablespoons buckwheat flour
Salt

For the Sauce
1 onion
4 tablespoons cold-pressed olive oil
1 liter hot water

Soak the quinoa in cold water for 1 hour.
Place the ground beef in a large bowl. Grate the onion and finely chop the parsley, then add them to the bowl.
Add salt, quinoa, and buckwheat flour. Knead the mixture thoroughly.
Shape the mixture into small meatballs, about the size of a marble, and place them on a flat plate.
Dice the onion and sauté it in a little oil. Add 4 cups of water and half a teaspoon of salt. Cover the pot and cook for 10 minutes.
After 10 minutes, add the meatballs and simmer on low heat for another 30 minutes, or until the meatballs are tender.
