½ cup azuki beans

Rinse the beans and soak them overnight in plenty of water.
The next day, drain the beans and place them in a large pot.
Add enough water to cover them and bring to a boil over high heat.
Once boiling, drain the water and refill the pot with cold water. Repeat this process once more.
For the third time, add water to the pot and bring the beans to a boil again.
After boiling, reduce the heat and simmer for about 1–1.5 hours until the beans are soft.
Check occasionally and add more water if necessary.
Once soft, drain any excess water and mash the beans using a spatula or masher until smooth.
Add salt and mix well.
