1 bunch sea beans (samphire)

1 tomato, finely diced

3 garlic cloves, finely chopped

4 walnuts, coarsely crushed

2 tablespoons Livvy olive oil

Juice of ½ lemon

Boil the sea beans in a pot of hot water for 7–8 minutes.
Drain and set aside to cool.
Once cooled, remove the woody inner parts by holding the stems and gently pulling. Transfer the cleaned sea beans to a bowl.
Add the diced tomato, garlic, and crushed walnuts.
Prepare the dressing and drizzle over the mixture. Serve chilled.
