4 large dates

1/2 tea glass of milk (50ml)

1 small ripe banana

4 teaspoons cocoa powder (10g)

- Soak the dates in hot water for about 10 minutes to soften.
- Remove the pits and blend the dates with the milk into a purée.
- Separate the egg yolk from the white.
- Add the egg yolk, banana, cocoa, and oat flour to the purée and blend again until smooth.
- Beat the egg white with baking powder and salt until stiff peaks form.
- Gently fold the egg white foam into the batter, stirring slowly in one direction to keep it fluffy.
- Grease two soufflé ramekins and divide the mixture evenly between them.
- Bake in a preheated oven at 180°C (356°F) for 12 minutes.
