500 g homemade yogurt
1 egg yolk
1 tablespoon orzo or vermicelli pasta
4 cups water
A pinch of salt
1 teaspoon dried mint
2 tablespoons extra virgin olive oil

Place the yogurt in a bowl and whisk well. Add the egg yolk and continue whisking, then add the flour and mix until smooth. Set this mixture aside.
In a small saucepan, melt the butter and olive oil together.
Add the dried mint and sauté briefly.
Add salt, stir, and remove from heat.
