2 large eggs
1/2 cup fresh spinach (finely chopped)
1/4 red bell pepper (finely chopped)
1/4 small onion (finely chopped)
1 small tomato (seeded and finely chopped)
1 tablespoon low-fat white cheese or ricotta cheese (optional)
Salt and black pepper (to taste)
Optional: A few sprigs of fresh parsley or mint
Olive oil spray or 1 teaspoon olive oil for greasing the muffin tins

Preheat the oven to 180°C.
Lightly grease the muffin tins.
Crack the eggs into a bowl, add salt and pepper, and beat well.
Add the chopped spinach, red pepper, onion, tomato, and white cheese (optional) to the beaten eggs; mix all the ingredients together well.
Divide the mixture evenly among the muffin tins.
Bake in the preheated oven for about 15-20 minutes, until the muffins rise and the eggs are fully cooked.
Let the muffins cool slightly before serving, garnished with fresh parsley or mint.
