3 cups finely chopped cauliflower
6 eggs (separated)
6 tablespoons Livvy Olive Oil
1 cup raw buckwheat flour (oat flour can also be used)
1 tablespoon baking powder
1 teaspoon salt
6 whole walnuts, finely chopped
Process the cauliflower in a food processor.
Separate the eggs in two separate bowls.
Beat the egg whites in the bowl where you collected the whites until they become foamy.
In the other bowl, add buckwheat flour, olive oil, baking powder and salt to the egg yolks and mix until they become homogeneous.
Then, slowly add the foam obtained in the other bowl to the homogeneous mixture and mix.
Finally, add the walnuts. You can set aside some of the walnuts for decoration.
Pour the mixture into your bowl covered with baking paper.
Bake in a preheated oven at 180 degrees for 30 minutes
Check if the inside of the bread is cooked. Remove from the oven when the top is slightly browned.
After waiting for 10 minutes, slice thinly.
