1/2 cup quinoa
2 cups water
1 egg
1 small celery
1 small zucchini
1 small carrot
2 sprigs of spring onion
1/4 bunch parsley
1/4 bunch dill
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon coriander
3 tablespoons oat flour
3 tablespoons Livvy Olive Oil
Soak 1/2 cup of quinoa in water first, then wash and drain until the water is clear.
Thinly slice the parsley, dill and onion.
Grate the carrot and zucchini.
Add all the ingredients to a bowl and crack 1 egg on top.
Add 2 cups of water along with salt, pepper, coriander and knead.
After making sure that the ingredients are mixed homogeneously, you can start shaping.
Then fry your ready-made meatballs in 3 tablespoons of olive oil, both sides, until they take on color.
