Separate the broccoli into florets and shred them in a food processor.
Put 1 tablespoon of olive oil in a pan and sauté the onion for 1-2 minutes, add the chopped broccoli and fry, then set aside.
Add 1 tablespoon of olive oil, whole wheat flour and milk to a small saucepan and cook by mixing with a whisk.
Beat the egg yolks with a whisk.
When the milk mixture has cooled a little, add the beaten egg yolks and aged kashar cheese and mix. (Reserve a piece of cheese to sprinkle on top before putting in the oven)
Beat the egg whites with a pinch of salt until they become snowy with a mixer.
Add the bacon, the milk mixture with egg yolk and black pepper to the roasted broccoli and mix.
Finally, add the egg whites that have become snowy to this mixture and mix gently with a spatula so as not to deflate too much.
Divide the mixture equally among the greased soufflé dishes with a napkin, sprinkle with the reserved cheddar cheese and bake in a preheated oven at 200 degrees for 20-25 minutes.
