Chicken Cauliflower Rice

Ingredients

Recipe

  • 500g chicken breast
  • 400g cauliflower, florets
  • 1 medium onion, chopped
  • 2 tablespoons Livvy Olive Oil
  • ½ bunch parsley, finely chopped
  • ½ bunch dill, finely chopped
  • Salt, black pepper, hot red pepper flakes to taste
  • Boil the chicken and shred it finely after it cools. (You can add black peppercorns and onion to the boiling water if desired.)
  • Put the cauliflower in a food processor and process until it is the size of fine bulgur grains.
  • Put olive oil and onion in a large pan and fry.
  • Add the cauliflower and salt and fry until it is completely cooked.
  • When the cauliflower is almost cooked, add the greens and mix.
  • Put it on a serving plate and place the shredded chicken on top.
  • Serve with black pepper and red pepper flakes.
