4 courgettes (800g)
1 cucumber (grated)
150g strained yogurt
1/2 bunch of dill (finely chopped)
4 tablespoons olive oil
8 walnuts (coarsely ground)
2 garlic cloves (crushed)
Salt
Red pepper flakes
Fresh mint (to garnish)
Wash the courgettes and grate them without peeling.
Squeeze the grated courgettes with both hands to extract as much moisture as possible.
Heat a frying pan over moderate heat, add olive oil and start frying the courgettes.
Fry gently for 15 minutes until the courgettes are cooked.
Take the courgettes to a plate and leave to cool.
Put yogurt, grated cucumber, crushed garlic cloves and dill in a large bowl and mix them, add the courgettes when they are cooled down and add coarsely ground walnuts. Then mix them all.
