Plateau Soup

Ingredients

  • 500 gr homemade yoghurt
  • 1 egg yolk
  • 1 tablespoon orzo
  • 4 cups water
  • A pinch of salt
  • 1 teaspoon mint
  • 2 tablespoons extra virgin olive oil.

Put the yogurt in a bowl and beat it well with a wire whisk. Then add an egg and continue mixing, then add the flour and mix. Set the mixture aside. Add the butter and oil to a small sauce pan and melt. Add the dried mint and fry. Add the salt and mix, then remove from the stove.
