Turkey Salad with Einkorn Wheat



  • 600g turkey breast
  • 160g einkorn wheat (boiled)
  • ½ bunch of parsley
  • ½ bunch of dill
  • 50g raw cashew nuts
  • 250g full-fat curd cheese
  • ½ tablespoon of pomegranate molasses
  • 1 teaspoon of flax seeds
  • juice of one lemon
  • 4 tablespoons olive oil
  • Salt and pepper
  • 120g medium size capia peppers
  • 120g head lettuce
  1. Cut the turkey breast into finger size strips and fry in a pan with 1 tablespoon of olive oil
  2. Cut cashew nuts into small pieces with a knife
  3. Boil einkorn wheat in boiling water
  4. Chop the full-fat curd cheese into cubes
  5. Finely chop parsley, lettuce and capia peppers
  6. Mix all ingredients in a large salad bowl
  7. Mix the remaining olive oil, lemon juice, pomegranate molasses and spices to prepare the sauce
  8. Add the sauce to the salad and place the turkey strips on top
